Let’s talk radishes.
I love radishes. I think they’re undervalued, delicious, versatile and so pretty. They’re probably one of my favorite vegetables. I can eat them for breakfast, lunch and dinner. They’ve got a delicious bite to them and can be served raw or cooked, which is great, because I love a vegetable that can match my effort level for the day.
I’ve been wanting to incorporate radishes into a recipe for a while, but wasn’t sure how. Then, I found this fantastic recipe for Radish Top Pesto. Oh my god. It’s so so so good. I’ve made it several times now, as well as recommended to friends. I especially love it because it’s a great way to use the radish tops and reduce waste.

I mixed the radish top pesto in with the egg yolk (and a little bit of mayo to keep it creamy) and then topped with sliced radishes. This recipe really lets you utilize the entire radish, from top to bottom. It’s also a great recipe for the incoming spring!

Ingredients:
- A dozen hardboiled eggs
- 1 serving of radish top pesto (recipe here)
- 2 tbsp light mayo
- 1 bunch radishes, thinly sliced
Directions:
- Peel your hardboiled eggs and cut into halves
- Combine yolks, mayo and radish top pesto in a bowl. Mix together until smooth
- Fill each egg half with pesto yolk mix
- Top with sliced radishes
- Serve and enjoy!
