Today’s recipe is a lesson in how to salvage deviled eggs that are going sideways. You know what I’m talking about. You’ve hard boiled your eggs and you’re ready to peel them. You feel your heart rate speed up. Your palms are sweaty. Are these eggs going to peel easily and deliver unto me beautiful and unblemished hard boiled eggs? Or are they going to betray me and crumble apart in my hands as I peel, leaving pits and marks, or even worse, completely splitting in two?
Don’t laugh. This is a real fear in the life of an egg blogger.
This brings me to today’s recipe. I was initially going to make Halloween themed Deviled Eggs, but alas, those will come next week now. Instead, as I started peeling my eggs I immediately knew it was going to be a Bad Egg Day™. They immediately started ripping and tearing into two. Of the eight I boiled, only four survived. My kitchen was a dark place today.
HOWEVER. Instead of crying over ruined eggs, I decided to salvage them and voila! I bring you Egg Salad Stuffed Deviled Eggs. This recipe will definitely make your friends think you are a witty and talented home chef and not a complete egg peeling disaster. Trust me.
All you need for this recipe is the essentials – eggs, mayo, and pepper. Ground mustard if you’re feeling fancy.
Egg Salad Stuffed Deviled Eggs
Ingredients:
- 12 hard boiled eggs
- 3 tbsp light mayo
- Pepper
- Ground Mustard
Directions:
- Hard boil your eggs, then peel 7-8 of them (depending on how big your eggs are) and slice into halves
- Combine egg yolks of sliced eggs and the remaining eggs in a bowl. Mash them up using a fork. This doesn’t have to look pretty, just like a nice mashed egg salad
- Using a spoon, fill the egg halves with the egg salad mix
- Sprinkle pepper and ground mustard on top of eggs
